INGREDIENTS

  • THE DOUGH:
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1 cup warm water
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 tsp salt
  • 1 TBSP plus 1 tsp olive oil
  • THE SAUCE:
  • 1 1/4 pounds fresh roma tomatoes, roughly chopped
  • 1/4 tsp salt
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/8 tsp crushed red pepper flakes
  • THE TOPPINGS:
  • 12 ounces ground beef
  • 3/4 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried rosemary
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 8 ounces mozzarella cheese, shredded
  • 2 ounces freshly grated Asiago cheese



DIRECTIONS

  1. THE DOUGH:
  2. In a large mixing bowl stir together the yeast and warm water. Stir in the flours, salt, and 1 TBSP olive oil until well combined and a dough is formed.
  3. Knead the dough in the bowl by hand for about 10 minutes or until dough is smooth and elastic.
  4. Form the dough into a ball then drizzle 1 tsp of olive oil over the dough and flip around a few times to coat in the oil. Loosely cover the bowl and put in a warm place to rise for about 1 hour.
  5. THE SAUCE:
  6. Place the chopped tomatoes into a large saucepan over medium-high heat then cook the tomatoes, using a spatula to break up the tomatoes, until the liquid in the pan begins to boil rapidly.
  7. Reduce the heat to medium and simmer, occasionally breaking up the tomatoes, for about 5 minutes.
  8. Transfer the contents of the pan to a blender or use an immersion blender and blend well.
  9. Place a colander over a container then pour the blended tomatoes through the colander and stir the blended tomatoes to filter out any seeds and skin.
  10. Discard the seeds and skin then put the tomato sauce back into the saucepan and stir in the salt, oregano, basil, garlic, onion, and crushed red pepper until well combined.
  11. Cook the tomato sauce over medium heat, stirring often, until thickened a bit, about 5 minutes then take off the heat and set aside until ready to use.
  12. THE TOPPINGS AND ASSEMBLY:
  13. Add the ground beef, salt, oregano, basil, rosemary, garlic, and black pepper to the now empty saucepan over medium-high heat and cook, while breaking up the beef, until well browned, about 6 minutes.
  14. Preheat the oven to 475°F.
  15. Stretch the dough out to fit onto a lightly oiled 16-inch pizza pan or 18x13-inch baking sheet.
  16. Spread the sauce evenly over the dough then sprinkle the mozzarella cheese evenly over the sauce.
  17. Sprinkle the cooked ground beef over the mozzarella then sprinkle the Asiago cheese evenly over the ground beef.
  18. Place the pizza in the preheated oven until the crust is lightly browned, about 20 minutes.
