Italian Style Pasta Salad
Penne pasta tossed with fresh mozzarella, onions, peppers, olives, tomatoes and an garlic vinaigrette dressing then served cold.

Ingredients
- 1 pound penne pasta
- 8 ounces fresh mozzarella cheese, cubed
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 8 ounces grape tomatoes, halved
- 1 cup sliced black olives
- 1/4 cup olive oil
- 3 TBSP red wine vinegar
- 2 medium garlic cloves, minced
- salt & freshly ground pepper
Directions
- Cook your pasta according to package directions. Drain the pasta then transfer the drained pasta to a large bowl.
- In a small bowl mix together the olive oil, vinegar, garlic, 1/2 tsp salt, and 1/4 tsp freshly ground pepper until well combined.
- Pour about HALF the dressing in the bowl over the pasta and toss to combine then set aside to cool for about 10 minutes.
- Add the mozzarella, bell peppers, olives, and tomatoes to the bowl and toss to combine.
- Cover the bowl and refrigerate for at least 1 hour.
- Take the pasta salad out of the refrigerator, pour the rest of the dressing on the pasta salad and toss to combine. Taste the pasta salad and season with additional salt and freshly ground pepper if necessary.
