Ingredients

1 1/2 cups red onion, diced
8 oz mini pepperonis
salt and pepper
For the dressing:
3/4 cup olive oil
1/4 cup apple cider vinegar
3 TBSP fresh grated Parmigiano-Reggiano cheese
1 TBSP dry parsley
1 tsp onion powder
1 tsp dry basil
1 tsp dry oregano
1 tsp garlic powder
1/2 tsp salt
1/4 tsp fresh ground pepper
1 tsp honey

Directions

1. Combine all the dressing ingredients in a jar or container with a lid and shake vigorously until well mixed, set aside.

2. Cook your pasta until tender, drain and rinse under cool water.

3. Mix pasta and all remaining ingredients including dressing in a large mixing bowl. Salt and pepper to taste.

4. Cover and refrigerate at least 8 hours before serving to allow flavors to meld.
