Pork Chops with Balsamic, Olive & Tomato Relish

Center cut boneless pork chops are cooked quickly in a pan and topped with a flavorful and easy to make olive relish.

1 tsp chopped garlic
1 TBSP chopped shallot
2 TBSP balsamic vinegar
1 cup chopped olives
1/2 cup diced tomatoes
1/4 tsp black pepper
pinch red pepper flakes
1 TBSP extra virgin olive oil
6 center cut boneless pork chops, 1/2 inch
1/4 cup flour
1 tsp salt
1/8 tsp pepper
1/4 tsp granulated garlic
4 TBSP oil


1. Mix all the ingredients for the relish and set aside.

2. Pat the pork chops dry with a paper towel. In a shallow dish combine flour, salt, pepper, and granulated garlic.

3. Heat a skillet over medium-high heat and add the oil. Dredge the pork chops with the flour mixture and shake off any excess. Carefully lower the chops into the oil in a single layer, cook in batches if necessary.

4. Cook until golden brown on one side and flip and cook until golden on the other, about 2-3 minutes per side. Repeat until all pork is cooked.

5. Lay on a platter and serve topped with the relish.


Arugula tossed with olive oil and shave Parmesan make a great accompaniment.
