INGREDIENTS

  • Relish:
  • 1 tsp chopped garlic
  • 1 TBSP chopped shallot
  • 2 TBSP balsamic vinegar
  • 1 cup chopped olives
  • 1/2 cup diced tomatoes
  • 1/4 tsp black pepper
  • pinch red pepper flakes
  • 1 TBSP extra virgin olive oil
  • Pork:
  • 6 center cut boneless pork chops, 1/2 inch
  • 1/4 cup flour
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp granulated garlic
  • 4 TBSP oil



DIRECTIONS

  1. Mix all the ingredients for the relish and set aside.
  2. Pat the pork chops dry with a paper towel. In a shallow dish combine flour, salt, pepper, and granulated garlic.
  3. Heat a skillet over medium-high heat and add the oil. Dredge the pork chops with the flour mixture and shake off any excess. Carefully lower the chops into the oil in a single layer, cook in batches if necessary.
  4. Cook until golden brown on one side and flip and cook until golden on the other, about 2-3 minutes per side. Repeat until all pork is cooked.
  5. Lay on a platter and serve topped with the relish.
