Mix all the ingredients for the relish and set aside.
Pat the pork chops dry with a paper towel. In a shallow dish combine flour, salt, pepper, and granulated garlic.
Heat a skillet over medium-high heat and add the oil. Dredge the pork chops with the flour mixture and shake off any excess. Carefully lower the chops into the oil in a single layer, cook in batches if necessary.
Cook until golden brown on one side and flip and cook until golden on the other, about 2-3 minutes per side. Repeat until all pork is cooked.
Lay on a platter and serve topped with the relish.
