INGREDIENTS

  • 4 boneless 1-inch thick pork chops
  • salt & freshly ground black pepper
  • 2 TBSP olive oil
  • 28 ounces sauerkraut, drained



DIRECTIONS

  1. Pat the pork chops well with paper towels to dry.
  2. Generously season the pork chops on both sides with salt & pepper.
  3. Heat the oil in a large saute pan over medium-high heat until the oil is hot.
  4. When the oil is hot, lay the pork chops in the pan and cook without moving for 4 minutes.
  5. Flip the pork chops over and cook for about 4 more minutes or until the pork chops have an internal temperature of about 140°F .
  6. Transfer the pork chops to a plate then loosely cover the pork chops with foil and set aside.
  7. Keep the pan over medium-high heat then add the sauerkraut to the pan and season with salt & pepper.
  8. Cook, stirring often, until heated through, about 3 minutes.
  9. Taste the sauerkraut and season with additional salt & pepper, if needed, and serve with the pork chops.
