INGREDIENTS
4 boneless 1-inch thick pork chops
salt & freshly ground black pepper
2 TBSP olive oil
28 ounces sauerkraut, drained

DIRECTIONS
Pat the pork chops well with paper towels to dry.
Generously season the pork chops on both sides with salt & pepper.
Heat the oil in a large saute pan over medium-high heat until the oil is hot.
When the oil is hot, lay the pork chops in the pan and cook without moving for 4 minutes.
Flip the pork chops over and cook for about 4 more minutes or until the pork chops have an internal temperature of about 140°F .
Transfer the pork chops to a plate then loosely cover the pork chops with foil and set aside.
Keep the pan over medium-high heat then add the sauerkraut to the pan and season with salt & pepper.
Cook, stirring often, until heated through, about 3 minutes.
Taste the sauerkraut and season with additional salt & pepper, if needed, and serve with the pork chops.
