Roasted Onion Vinaigrette
A roasted onion dressing made with apple cider vinegar, whole-grain mustard, and thyme.

Ingredients
- 1/2 cup diced onion
- 2/3 cup peanut oil
- 1 tsp raw honey
- 3 TBSP apple cider vinegar
- 1 tsp whole grain mustard
- 1 TBSP mayonnaise
- 1/8 tsp dried thyme
- 1/8 tsp kosher salt
- dash pepper
- 1 TBSP water
Directions
- Preheat oven to 400 degrees F.
- Toss onions in oil and place on a baking sheet. Roast the onions in the oven for 10 to 15 minutes or until edges become dark.
- Place roasted onions and all other ingredients in a jar and shake to combine.
