INGREDIENTS

  • 1 cup plain Greek yogurt
  • 1 TBSP fresh lemon juice
  • 1 TBSP ground coriander
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp cayenne pepper
  • 2 pounds bone-in skin-on chicken thighs



DIRECTIONS

  1. In a large bowl mix together the yogurt, lemon juice, coriander, salt, cumin, ginger, cayenne, salt, and black pepper until well combined.
  2. Place the chicken thighs in the bowl then flip the chicken around to coat in the yogurt mixture.
  3. Cover the bowl and refrigerate for 1 hour.
  4. Take the chicken out of the refrigerator then preheat the oven to 425°F.
  5. Line a large rimmed baking sheet with parchment paper then spread the chicken thighs out on the baking sheet skin-side up.
  6. Place the baking sheet on the top shelf of the preheated oven and bake the chicken until cooked through, about 35 minutes.
  7. Turn the oven to broil then broil the chicken thighs for about 2 minutes or until the skin on the chicken begins charring.
