INGREDIENTS
8 ounces uncooked penne pasta
2 TBSP olive oil
8 ounces white button mushrooms, sliced
2 medium garlic cloves, minced
1 tsp dried parsley
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp dried thyme
1/4 tsp dried rosemary
salt & freshly ground black pepper
4 ounces feta cheese, crumbled

DIRECTIONS
Cook the penne according to package directions then drain the pasta reserving 1/2 cup of the pasta water and set aside.
Heat the oil in a large saute pan over medium-high heat.
Cook the mushrooms in the pan, stirring occasionally, until the mushrooms are well browned, about 7 minutes.
Stir in the garlic, parsley, oregano, basil, thyme, rosemary, 1/2 tsp salt, and 1/4 tsp black pepper and cook while stirring for 1 minute.
Add the reserved pasta water to the pan then use a wooden spoon to scrape any bits stuck to the bottom of the pan.
Gently stir in the cooked penne and feta cheese.
Season with salt & pepper to taste.
