3 poblano peppers, stems and seeds removed, cut into 2-inch pieces
12 ounces lager beer
2 15-ounce cans hominy, drained
juice of 1 medium lime
FOR SERVING:
warm tortillas
steamed rice
sliced avocado
DIRECTIONS
In a large bowl mix the pork with the oil, chili powder, cumin, cumin seed, smoked paprika, corn starch, salt, black pepper, onion, garlic, and poblanos then cover and refrigerate for 8 to 12 hours.
Transfer the marinated pork and vegetables to a large slow cooker then pour in the beer.
Place the lid on the slow cooker and cook on LOW for 6 hours.
Stir in the hominy and continue to cook for 2 more hours.
Stir in the lime juice and season with salt and pepper, if needed.
Serve the stew with fresh tortillas and/or rice and sliced of avocado.
