INGREDIENTS
2 pounds boneless pork shoulder
1 TBSP olive oil
salt & freshly ground pepper
1 large yellow onion, chopped
2 TBSP paprika
2 TBSP garlic powder
1/2 cup water
1 TBSP whole grain mustard
1/2 cup sour cream
12 ounces uncooked egg noodles

DIRECTIONS
Generously season the pork all over with salt & pepper.
Heat the oil in a large saute pan over medium-high heat.
When the oil is hot sear the pork until well browned on all sides, about 3 minutes per side.
Transfer the pork to a large slow cooker and set aside.
Add the onion, paprika, garlic, and water to the pan then use a wooden spoon to scrape any stuck on bits from the bottom of the pan.
Scrape the contents of the pan into the slow cooker over top of the pork.
Place the lid on the slow cooker and cook, on LOW, for about 8 hours or until pork is tender.
Use two forks to shred the pork
Turn off the slow cooker and season with salt and pepper to taste then set aside while you make the noodles.
Cook your noodles according to package directions then drain and set aside.
Stir the mustard and sour cream in with the pork until well combined then taste and season with salt & pepper.
To serve: lay some noodles into a dish then top with the pork.
