INGREDIENTS

  • PORK AND MARINADE
  • 1 TBSP cornstarch
  • 1 TBSP peanut oil
  • 1 TBSP soy sauce
  • 1 TBSP freshly minced ginger
  • 1 pound pork shoulder, thinly sliced
  • RICE
  • 1 cup uncooked jasmine rice
  • 1 1/2 cups water
  • 1/8 tsp salt
  • SAUCE
  • 2 TBSP soy sauce
  • 1 TBSP rice vinegar
  • 1 TBSP freshly minced ginger
  • 2 medium garlic cloves, minced
  • 1 tsp sesame oil
  • 1/4 tsp crushed red pepper flakes
  • STIR-FRY
  • 1 TBSP plus 1 TBSP peanut oil
  • 1 medium green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 medium leek, light green part thinly sliced
  • 1-inch piece of ginger, thinly sliced
  • salt & freshly ground pepper



DIRECTIONS

  1. MARINATE THE PORK:
  2. Make the marinade by mixing together the cornstarch, oil, soy sauce, and ginger in a large bowl.
  3. Place the pork in the bowl and toss around to coat in the marinade then cover the bowl and set aside for about 15 minutes.
  4. MAKE THE RICE:
  5. In a medium-size saucepan stir together the rice, water, and salt and bring to a boil over medium-high heat.
  6. Place a lid on the pan and reduce the heat to low then simmer the rice over low heat, without removing the lid, for 10 minutes.
  7. Turn off the heat and let the pan sit on the stove, keeping the lid on, for 20 more minutes.
  8. MAKE THE SAUCE:
  9. In a small bowl mix together the soy sauce, vinegar, ginger, garlic, sesame oil, and crushed red pepper then set aside.
  10. MAKE THE STIR-FRY:
  11. Heat 1 TBSP of the peanut oil in a large wok over high heat.
  12. Add the pork to the wok in a single layer and allow to cook, without moving the pork, for about 1 minute.
  13. Now stir the pork and continue to stir-fry the pork until no longer pink, 1 to 2 more minutes.
  14. Transfer the pork to a plate and set aside.
  15. Heat 1 TBSP of peanut oil in the now empty wok over high heat.
  16. Add the bell peppers, leek, and ginger and stir-fry for about 1 minute.
  17. Add the pork and sauce into the wok with the vegetables and stir-fry for about 1 more minute.
  18. Season the stir-fry with salt & pepper to taste.
  19. SERVE:
  20. Remove the lid from the rice then fluff the rice with a fork.
  21. Serve the pork stir-fry with the steamed rice.
