INGREDIENTS
15 ounces beef smoked sausage, sliced
1 large onion, diced
4 garlic cloves, minced
12 ounces Yukon gold potatoes, cut into bite-size pieces
8 cups water
1 pound dried split peas
1/2 tsp smoked paprika
salt & freshly ground black pepper

DIRECTIONS
In a dutch oven brown the sausage over medium heat, turning occasionally, about 5 to 6 minutes.
Add the onions, garlic, paprika, 1 tsp salt, and 1/2 tsp black pepper to the dutch oven and cook, stirring often, for about 2 minutes.
Stir in the water and split peas then bring to a boil.
Reduce the heat to low and simmer for 1 hour, stirring occasionally.
Add the potatoes and continue to simmer for 30 more minutes, or until peas have fully dissolved and potatoes are tender.
Season with salt & pepper to taste.
