An easy to make vegetarian potato soup made in the slow cooker with onion, celery, garlic, dill, and a little Greek yogurt for richness.

INGREDIENTS
2 pounds russet potatoes, peeled and cut into 1-inch cubes
1 medium yellow onion, diced
2 ribs of celery, diced
3 medium garlic cloves, roughly chopped
4 cups water
1 tsp dried dill
1/2 tsp dried thyme
salt & freshly ground black pepper
1/2 cup plain Greek yogurt
optional toppings: shredded cheddar, sliced green onion, croutons, etc.

DIRECTIONS
Add the cubed potatoes, onion, celery, garlic, water, thyme, 2 tsp salt, and 1/4 tsp black pepper to a 3-quart slow cooker.
Place the lid on the slow cooker and cook on LOW for 7 to 8 hours or until potatoes are tender.
Use an immersion blender or a stand blender in batches to puree the soup.
Stir in the Greek yogurt then taste the soup and season with additional salt & pepper if needed.
Top with shredded cheese, sliced green onion, and/or croutons.
