Spicy Chicken Salad with Pecans

Ingredients

1 chicken boneless skinless chicken breast, 10-12oz
1/4 cup red onion, diced
1/4 cup green pepper, diced
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup pecans, chopped
1/4 tsp salt
1/8 tsp fresh ground pepper
1/4 tsp cayenne pepper

Directions

1. Season the chicken breast liberally with salt and pepper and cook in a non-stick skillet over medium heat about 5 minutes per side or until it reaches an internal temp of 165° F.Set chicken breast aside to cool.

2. Cut chicken into bite size pieces and place in a large bowl. Mix in all the remaining ingredients except the pecans.

3. Refrigerate salad for 1 hour.

4.Preheat oven to 350° F.

5. Place pecans on a baking sheet and toast in the preheated oven for 5 minutes.

6. Stir the pecans into the chicken salad just before serving.
