INGREDIENTS

  • 12 ounces boneless skinless chicken breasts
  • 1 TBSP olive oil
  • salt & freshly ground black pepper
  • 1 medium mango, peeled and diced
  • 1 medium jalapeno, diced
  • 1/2 cup plain Greek yogurt



DIRECTIONS

  1. Add the chicken breasts to a large bowl then drizzle with the olive oil and generously season with salt & pepper then toss to coat.
  2. Heat a skillet over medium heat.
  3. Add the chicken to the hot skillet then place a lid on the skillet and cook for about 6 minutes.
  4. Uncover the pan, flip the chicken then recover and cook another 5 to 7 minutes or until chicken is cooked through.
  5. Transfer to chicken to a cutting board and allow to rest for about 10 minutes.
  6. Dice the chicken the transfer it to a large mixing bowl.
  7. Add the diced mango, jalapeno, and yogurt to the bowl and stir in with the chicken.
  8. Taste and season with salt & pepper then cover and refrigerate for at least 1 hour to allow flavors to meld.
