1 boneless skinless chicken breast (about 10 ounces) cut into bite-size pieces
1 TBSP olive oil
salt & freshly ground black pepper
8 ounces, sharp cheddar cheese, shredded
DIRECTIONS
DOUGH:
In a large mixing bowl stir together the yeast and water then add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of the bowl.
Knead the dough by hand in the bowl for about 10 minutes or until dough is smooth and elastic.
Form the dough into ball then drizzle the 1 tsp of olive oil over the dough ball. Now flip the dough ball around a few times to coat in the oil.
Loosely cover the bowl and put in a warm place to rise for about 1 hour.
BBQ SAUCE:
Add the BBQ SAUCE ingredients to a medium-size saucepan over medium heat and bring to a slight boil.
reduce heat to low and simmer, stirring occasionally, until flavors have melded, about 10 minutes.
Take the pan off the heat then season with salt & pepper to taste and set aside.
TOPPINGS AND ASSEMBLY:
Preheat the oven to 450°F.
Put the chicken pieces into a large bowl and drizzle with the olive oil then season generously with salt & pepper and toss to coat.
Heat a skillet over medium heat then cook the chicken, stirring occasionally, until no longer pink, about 4 minutes.
Stretch the dough onto a lightly oiled large pizza pan or baking sheet.
Spread the BBQ sauce onto the dough the sprinkle the cheddar cheese evenly on top then spread the chicken pieces out evenly on top of the cheese.
Bake the pizza in the preheated oven for 15 to 18 minutes or until crust is lightly browned.
