INGREDIENTS
2 pounds boneless beef top round roast
1 TBSP olive oil
2 tsp salt
1 tsp freshly ground black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp oregano

DIRECTIONS
Preheat the oven to 350°F
Pat the beef dry with paper towels then set aside.
In a small bowl stir together the olive oil, salt, pepper, garlic, onion, thyme, and oregano.
Rub the roast all over with the seasoning mix then set aside.
Heat a large cast-iron skillet over medium-high heat until the skillet is very hot.
Sear the beef in the skillet until well browned on all sides, about 3 minutes per side.
Place the beef and skillet in the preheated oven and cook until the beef has an internal temperature of 140°F, 20 to 25 minutes.
Take the beef out of the oven and allow to rest 15 minutes before slicing and serving.
