INGREDIENTS

  • 2 pounds boneless beef top round roast
  • 1 TBSP olive oil
  • 2 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp oregano



DIRECTIONS

  1. Preheat the oven to 350°F
  2. Pat the beef dry with paper towels then set aside.
  3. In a small bowl stir together the olive oil, salt, pepper, garlic, onion, thyme, and oregano.
  4. Rub the roast all over with the seasoning mix then set aside.
  5. Heat a large cast-iron skillet over medium-high heat until the skillet is very hot.
  6. Sear the beef in the skillet until well browned on all sides, about 3 minutes per side.
  7. Place the beef and skillet in the preheated oven and cook until the beef has an internal temperature of 140°F, 20 to 25 minutes.
  8. Take the beef out of the oven and allow to rest 15 minutes before slicing and serving.
