INGREDIENTS
THE DOUGH:
1 packet (2 1/4 tsp) active dry yeast
1 cup warm water
1 TBSP raw honey
3 cups all-purpose flour
1 tsp salt
1 TBSP plus 1 TBSP olive oil
TOPPINGS:
4 TBSP olive oil
10 ounces fresh baby spinach, chopped
3 medium cloves garlic, minced
salt and pepper
4 ounces pepper jack cheese, shredded
4 ounces mozzarella cheese, shredded
1/4 cup freshly grated Parmesan cheese

DIRECTIONS
THE DOUGH:
In a large mixing bowl stir together the yeast, honey and water.
Stir in the flour, salt, and 1 TBSP oil and mix until well combined and a dough is formed.
Knead the dough in the bowl, by hand, for about 10 minutes or until the dough becomes smooth and elastic.
Form the dough into a ball and drizzle with 1 TBSP of olive oil then loosely cover the bowl and put in a warm place to rise, about 30 minutes.
Stretch the dough out onto a lightly oiled 16-inch pizza pan or an 18x13-inch baking sheet.
THE TOPPINGS AND ASSEMBLY:
Preheat the oven to 450°F.
Heat the oil in a large saute pan over medium heat.
Add the spinach, garlic, 1/8 tsp salt, and 1/8 tsp pepper to the pan and cook, stirring often, until spinach has wilted, about 3 minutes.
Spread the spinach and oil mixture onto the pizza dough then sprinkle the pepper jack, mozzarella, and Parmesan on top.
Bake the pizza in the preheated oven for 15 to 18 minutes or until the crust is lightly browned.
