Place the pork pieces, soy sauce, sesame oil, minced garlic, minced ginger, and crushed red pepper into a large bowl and mix until well combined and the pork is evenly coated then cover the bowl and set aside to marinate for about 30 minutes while you make the rice.
RICE:
Stir together the uncooked rice, water and salt in a medium-size saucepan over medium-high heat and bring to a slight boil.
Place a lid on the pan then reduce the heat to low and simmer the rice, without removing the lid, for 10 minutes.
Turn the heat off and allow the rice to sit on the stove, without removing the lid, for 15 more minutes.
Fluff the rice with a fork and set aside.
STIR-FRY
Heat the peanut oil in a large wok over high heat.
When hot add the onion and ginger to the wok in and stir fry for about 1 minute.
Add the pork and marinade to the wok and stir fry for about 3 minutes.
Add the broccoli to the wok and stir fry for about 2 more minutes, or until pork is cooked through and broccoli is slightly tender.
Take off the heat then taste and season with salt & freshly ground black pepper, if needed.
Serve the pork stir-fry with the steamed jasmine rice.
