INGREDIENTS
SALAD:
1 romaine lettuce heart, chopped
8 ounces fresh baby spinach leaves
4 green onions, thinly sliced
1 red bell pepper, chopped
1 medium avocado, chopped
1/4 cup thinly sliced Castelvetrano olives
1 large cucumber, thinly sliced
1/2 cup shaved Parmesan cheese
DRESSING:
1/3 cup olive oil
2 TBSP white balsamic vinegar
2 tsp Dijon mustard
1 medium garlic clove, peeled and minced
1/4 tsp salt
1/8 tsp freshly ground black pepper
CONVERSION CALCULATOR
DIRECTIONS
Toss together all the salad ingredients in a large serving bowl.
In a separate bowl whisk together all the dressing ingredients until well combined.
Pour the dressing over the salad and toss to combine.
