INGREDIENTS
2 ounces arugula
1/4 cup chopped red onion
1 ripe avocado, peeled, pitted, and diced
2 TBSP extra-virgin olive oil
2 TBSP freshly squeezed lime juice
1/8 tsp salt
1/8 tsp pepper
1/4 cup freshly grated Parmesan cheese
CONVERSION CALCULATOR
DIRECTIONS
In a large mixing bowl add the arugula, onion, and avocado. Toss to combine.
In a small bowl whisk together the oil, lime juice, salt, and pepper.
Pour the dressing over the salad and toss to combine. Sprinkle the Parmesan on top.
