INGREDIENTS
1 TBSP olive oil
1 large yellow onion, diced
2 medium carrots, diced
2 ribs of celery, diced
2 garlic cloves, minced
salt & pepper
5 cups water
1/2 tsp dried thyme
1 bay leaf
8 ounces egg noodles
1 TBSP fresh lemon juice
2 TBSP freshly chopped parsley
CONVERSION CALCULATOR
DIRECTIONS
Heat the oil in a Dutch oven over medium-high heat.
Add the onion, carrots, celery, garlic to the pot and cook, stirring occasionally, until veggies begin to soften, about 5 minutes.
Add the water, thyme, bay leaf, 1 tsp salt, and 1/4 tsp pepper then bring to a boil.
Stir in the noodles then cover the pot oven and reduce the heat to medium.
Cook the soup, stirring occasionally, for 10 to 15 minutes or until noodles are tender.
Stir in the lemon juice and fresh parsley then season with salt & pepper to taste.
