DIRECTIONS
Add the mushrooms and onion to a food processor and pulse a few times, just until everything is finely chopped.
Heat the oil in a large pan over medium-high heat. Add the mushroom and onion mix to the pan and cook, stirring occasionally, until the moisture has evaporated, about 6 to 7 minutes.
Transfer the cooked mushrooms and onions to a large mixing bowl and set aside to cool, about 10 minutes.
Add the eggs, pepper, soy sauce, walnuts, shredded cheddar, breadcrumbs, and oats to the mushroom and onions and mix thoroughly.
Using your hands form four equal size patties and lay on a baking sheet.
Cover the burgers and refrigerate for at least 2 hours.
Pull the burgers out of the fridge and preheat the oven to 425°F.
Place the burgers in the preheated oven and bake for 20 minutes.
Remove burgers from the oven, add a slice of cheese on each burger and allow to melt.
Using a metal spatula transfer each burger to the hamburger buns and add your favorite toppings.
