Ammoglio Sauce

Ingredients
2 TBSP olive oil
1 1/2 pounds Roma tomatoes, chopped
4 large garlic cloves, chopped
2 TBSP freshly squeezed lemon juice
2 tsp dried oregano
1/2 tsp crushed red pepper flakes
salt & freshly ground black pepper
Directions
1. Heat the olive oil in a large saucepan over medium heat.
2. When the oil is hot add the tomatoes and garlic and cook while stirring and breaking up the tomatoes with a wooden spoon or spatula for about 2 minutes.
3. Add the lemon juice, oregano, crushed red pepper, and 1/2 tsp salt to the pan and stir to combine.
4. Reduce the heat to low and cover the pan. Simmer over low heat, stirring and breaking up the tomatoes every so often, for about 20 minutes.
5. Season with salt & freshly ground pepper to taste.
