Ingredients

  • 5 ounces fresh baby spinach leaves
  • 2 ounces feta cheese, crumbled
  • 1 medium apple, cored and thinly sliced
  • 1/2 cup chopped walnuts
  • GARLIC MUSTARD VINAIGRETTE:
  • 1 TBSP Dijon mustard
  • 1 small garlic clove, minced
  • 3 TBSP olive oil
  • 1 TBSP red wine vinegar
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper

Directions

  1. In a large bowl add the spinach, feta, apple, and walnuts and toss to combine.

  2. Mix the GARLIC MUSTARD VINAIGRETTE ingredients together in a separate bowl until well combined.

  3. Drizzle a little of the dressing on the salad and toss to combine.

  4. Serve the salad with the remaining dressing on the side.
