INGREDIENTS
5 ounces fresh baby spinach leaves
2 ounces feta cheese, crumbled
1 medium apple, cored and thinly sliced
1/2 cup chopped walnuts
GARLIC MUSTARD VINAIGRETTE:
1 TBSP Dijon mustard
1 small garlic clove, minced
3 TBSP olive oil
1 TBSP red wine vinegar
1/8 tsp salt
1/8 tsp ground black pepper

DIRECTIONS
In a large bowl add the spinach, feta, apple, and walnuts and toss to combine.
Mix the GARLIC MUSTARD VINAIGRETTE ingredients together in a separate bowl until well combined.
Drizzle a little of the dressing on the salad and toss to combine.
Serve the salad with the remaining dressing on the side.
