An Asian inspired salad made with fresh cucumber, carrots, red onion, bell pepper, and cilantro then tossed in a ginger dressing.

INGREDIENTS
DRESSING:
1/2 cup olive oil
1/4 cup rice vinegar
1 TBSP freshly minced ginger
1 TBSP raw honey
1/2 tsp toasted sesame oil
1/2 tsp salt
1/4 tsp crushed red pepper flakes
SALAD:
2 large cucumbers - seeded, quartered and thinly sliced
2 medium carrots, julienned
1/2 cup thinly sliced red onion
1 medium yellow bell pepper, thinly sliced
2 green onions, thinly sliced
2 TBSP freshly chopped cilantro
CONVERSION CALCULATOR
DIRECTIONS
Whisk together all the DRESSING ingredients in small container until well combined.
Toss the SALAD ingredients together in a large mixing bowl.
Drizzle enough of the dressing to lightly coat the SALAD then toss to coat evenly.
Taste and, if needed, drizzle on a little more dressing and/or season with additional salt & pepper.
Serve the salad with the remaining dressing on the side.
