optional: freshly grated Parmesan or Asiago cheese for serving
DIRECTIONS
Preheat the oven to 400°F.
Scrub the potatoes then poke several holes all over the potatoes using a fork.
Place the potatoes in the preheated oven and bake until tender, about 1 hour.
Take the potatoes out of the oven and set aside to cool for about 10 minutes.
Cut the potatoes in half lengthwise then scoop out the white flesh into a large mixing bowl, discard the skins, and use a fork to thoroughly mash the potatoes.
Stir the flour and 1 tsp salt in with the mashed potatoes then add the egg and stir until everything is well combined.
Lightly flour a flat work surface then pull out two baking sheets and set aside.
Use your hands to form 1/2-inch thick ropes from the potato mixture and cut the ropes into 3/4-inch pieces then roll each piece on the back of a fork to create ridges and spread the gnocchi out onto the baking sheets about 1/2-inch apart.
Let the gnocchi rest while you make the garlic olive oil.
Add the oil and smashed garlic to a saucepan over medium-low heat then cook, stirring often, until the garlic becomes a golden brown color, about 25 minutes.
Remove the smashed garlic from the oil and discard then pour the oil into a large serving bowl and set aside.
Bring a large pot of salted water to a boil over medium-high heat.
Drop the gnocchi, in batches, into the boiling water, try not to overcrowd them, and cook, while gently stirring the water, until the gnocchi float to the top, 2 to 3 minutes.
Use a slotted spoon to transfer the gnocchi to the bowl of oil and toss to coat then cook the remaining gnocchi the same way.
Season the gnocchi with salt & pepper to taste and top with freshly grated Parmesan or Asiago cheese, if using.
NOTES
TO FREEZE FOR LATER: When the gnocchi is formed and on the baking sheets, place the baking sheets in the freezer until the gnocchi is frozen then remove them from the baking sheets and place them in freezer safe containers for later use.
TO COOK FROM FROZEN: Bring a large pot of salted water to a boil then drop the frozen gnocchi into the boiling water and cook until they float to the top.
