INGREDIENTS
1 1/2 pounds sweet potatoes, scrubbed and grated
1/2 medium onion, finely chopped
2 large eggs, beaten
1 tsp salt
1/4 tsp black pepper
2 TBSP plus 1 TBSP olive oil

DIRECTIONS
Preheat the oven to 400°F.
Stir together the potato, onion, eggs, salt, pepper, and 2 TBSP of the olive oil in a large bowl until well combined.
Spread the potato mixture evenly into a 9x13-inch baking dish then brush the top with the remaining 1 TBSP of oil.
Bake in the preheated oven for about 1 hour or until edges are well browned.
Remove the kugel from the oven and allow to sit for 15 minutes before serving.
