INGREDIENTS
1 TBSP olive oil
2 tsp salt
2 tsp garlic powder
1 tsp freshly ground black pepper
2 pound boneless pork shoulder/butt
1 large yellow onion, thinly sliced
1/2 cup water
1 1/2 pounds baby potatoes, halved

DIRECTIONS
Preheat the oven to 375°F.
In a small bowl mix together the salt, garlic, and black pepper until well combined.
Rub the spice mixture all over the pork.
Heat a dutch oven on the stovetop over medium-high heat.
When the dutch oven is hot add the pork and sear on all sides until well browned, 2 to 3 minutes per side.
Transfer the seared pork to a plate and set aside.
Keep the dutch oven over medium-high and heat and add the onion then cook, stirring often, until onion is softened, about 5 minutes.
Pour in the water then place the pork back into the dutch oven, fat-side up, on top of the onions and lay the potatoes around the pork.
Put the lid on the dutch oven then place into the preheated oven and bake for about 3 hours, or until the pork and potatoes are tender.
