BBQ Rubbed Cast Iron Pork Chops

Boneless pork chops dry rubbed with bbq spices and pan seared.

  • 4 center cut boneless pork chops, about 3/4 inch thick
  • 1 tsp salt
  • 1 TBSP paprika
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 2 tsp coriander
  • 1 tsp sriracha powder
  • 1/4 tsp black pepper
  • 2 TBSP peanut oil


  1. Season chops with the salt. Cover and refrigerate for 1 hour.

  2. In a bowl combine the paprika, cumin,garlic, coriander, sriracha, and pepper.

  3. Dry the pork chops with paper towels. Rub spice mixture all over chops.

  4. Heat the oil over medium heat in a cast iron skillet until oil begins to smoke.

  5. Cook the chops on each side for about 3 to 4 minutes.

  6. Chops should be nicely caramelized and register an internal temperature of 135 degrees F.
