- 4 center cut boneless pork chops, about 3/4 inch thick
- 1 tsp salt
- 1 TBSP paprika
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 2 tsp coriander
- 1 tsp sriracha powder
- 1/4 tsp black pepper
- 2 TBSP peanut oil

Directions
- Season chops with the salt. Cover and refrigerate for 1 hour.
- In a bowl combine the paprika, cumin,garlic, coriander, sriracha, and pepper.
- Dry the pork chops with paper towels. Rub spice mixture all over chops.
- Heat the oil over medium heat in a cast iron skillet until oil begins to smoke.
- Cook the chops on each side for about 3 to 4 minutes.
- Chops should be nicely caramelized and register an internal temperature of 135 degrees F.
