DIRECTIONS
SAUCE:
Mix the water, soy sauce, sesame oil, and black pepper in a small sauce pan until well combined.
Stir in the cornstarch until no lumps remain.
Simmer the sauce over medium heat, stirring often, until thickened, 3 to 4 minutes.
Take the sauce off the heat and set aside.
OMELETTE:
Mix together the ground pork, soy sauce, sesame oil, ginger, garlic, and black pepper until well combined.
Add the pork to a large wok over medium heat and cook, while breaking up the pork, until no longer pink, about 5 minutes.
Transfer the pork to a paper towel lined plate to soak up any excess fat then wipe out the wok.
Whisk the eggs together in a bowl then crumble the cooked pork in with the eggs.
Heat the wok over medium-high heat then drizzle the peanut oil into the wok.
Pour the egg mixture into the hot wok and cook until the bottom sets and is light browned, about 2 minutes.
Use a spatula to go around the edges of the egg, lifting it to allow runny egg from the top to go underneath.
When the egg is set fold it in half and let it cook for 1 minute then flip it over and cook for 1 more minute.
Slide the omelette onto a plate then cut the omelette in half.
Place each omelette half onto a serving plate then pour the sauce over top and sprinkle on the sesame seeds.
