Broccoli & Parmesan Quinoa
An easy and healthy vegetarian side dish of fluffy quinoa with broccoli and parmesan cheese.

Ingredients
- 1/2 cup quinoa
- 6 oz frozen broccoli florets, thawed and finely chopped
- 1 cup vegetable broth
- 1/2 freshly grated Parmesan cheese
- salt & pepper
Directions
- Add the quinoa and vegetable broth to a medium size saucepan over medium-high heat. Bring to a boil, reduce heat to medium-low and cook, stirring occasionally, about 15 minutes or until the liquid has been absorbed.
- Take off the heat and stir in the chopped broccoli, cover the pan with a lid and let rest 10 minutes. Remove the lid and stir in the parmesan cheese. Add salt and pepper to taste.
