INGREDIENTS

  • 3 cups chopped carrots
  • 3 cups water
  • 1 tsp salt
  • 1/2 tsp chopped ginger
  • 2 TBSP heavy cream



DIRECTIONS

  1. Put the carrots, water, salt, and ginger together in a sauce pot and bring to a boil. Allow to boil for 15 minutes or until carrots are tender and easily mashed with the side of a fork.
  2. Put all ingredients from the pot in to the food processor and process until smooth.
  3. Add the cream and puree for 30 seconds more.
  4. Taste and season with salt and pepper if desired.
