Spicy Sweet Potato and Carrot Mash

A creamy sweet potato and carrot mash with a little kick.

Spicy Sweet Potato and Carrot Mash recipe

Ingredients

  • 1 large sweet potato (about 12 ounces), peeled and cut into 1-inch pieces
  • 3 medium carrots (about 6 ounces), peeled and cut into 1-inch pieces
  • 2 TBSP unsalted butter
  • 1/4 cup heavy cream
  • 1/4 tsp cayenne pepper
  • salt & pepper

Directions

  1. Add the vegetables, 1/2 tsp salt and enough water to cover the vegetables by at least 1 inch into large pot over medium-high heat.

  2. Bring to a boil and cook until vegetables are tender, 10 to 15 minutes.

  3. Drain the vegetables and transfer to a large bowl with the butter, heavy cream, and cayenne. Mash using a potato masher until no lumps remain.

  4. Season with salt and pepper to taste.
