INGREDIENTS
1 large sweet potato (about 12 ounces), peeled and cut into 1-inch pieces
3 medium carrots (about 6 ounces), peeled and cut into 1-inch pieces
2 TBSP unsalted butter
1/4 cup heavy cream
1/4 tsp cayenne pepper
salt & pepper
CONVERSION CALCULATOR
DIRECTIONS
Add the vegetables, 1/2 tsp salt and enough water to cover the vegetables by at least 1 inch into large pot over medium-high heat.
Bring to a boil and cook until vegetables are tender, 10 to 15 minutes.
Drain the vegetables and transfer to a large bowl with the butter, heavy cream, and cayenne. Mash using a potato masher until no lumps remain.
Season with salt and pepper to taste.
