INGREDIENTS
1/4 cup plain Greek yogurt
2 TBSP olive oil
2 TBSP whole grain mustard
1 TBSP apple cider vinegar
1 TBSP ground coriander
2 tsp salt
1/2 tsp garlic powder
1/4 tsp freshly ground black pepper
2 1/2 to 3 pound pork top loin roast
CONVERSION CALCULATOR
DIRECTIONS
Mix together the yogurt, oil, mustard, vinegar, coriander, salt, garlic and pepper in a large container until well combined.
Place the pork roast into the bowl and coat in the yogurt-spice mix until well coated then cover the container and refrigerate for at 8 hours.
Place a sheet of foil onto a rimmed baking sheet and top with a wire baking rack.
Remove the pork from the fridge ad place on the wire rack.
Preheat the oven to 500°F.
Roast the pork at 500°F for 30 minutes.
Reduce the heat to 400°F then roast the pork an additional 15 minutes or until the internal temperature of the pork reaches 145°F.
Take the pork out of the oven and allow to rest for 15 minutes before slicing and serving.
