A pork loin seasoned with a mix of black pepper, paprika, garlic, onion, fennel seed, thyme, rosemary, and cayenne then pan-seared and roasted in the oven in a cast-iron skillet.
In a small bowl mix together the oil, salt, and all the spices (paprika, garlic, onion, fennel, black pepper, thyme, rosemary, and cayenne) until well combined.
Pat the pork dry with paper towels then rub the oil and spice mixture evenly all over the pork.
Heat a large cast-iron skillet over medium-high heat until the skillet is hot.
When the skillet is hot lay the pork loin in the pan and sear on all sides until well browned, 2 to 3 minutes per side.
Turn the pork, fat-side up, in the skillet then place the skillet in the preheated oven and roast the pork, 70 to 80 minutes, or until cooked through (about 145°F internal temperature).
Take the pork out of the oven then transfer to a cutting board and let rest for about 20 minutes before slicing and serving.
