salt & freshly ground black pepper
1 1/2 pounds boneless pork shoulder, cut into roughly 1/2-inch pieces

DIRECTIONS
In a large bowl mix together the garlic, onion, 1 tsp salt, and 1/2 tsp black pepper.
Add the pieces of pork to the bowl with the spices then toss to coat.
Heat the oil in a large pot or Dutch oven over medium-high heat.
Spread the pork out in a single layer into the pot and allow the pork to sear for about 2 minutes without moving the pork.
Stir the pork and continue to cook, stirring occasionally, for about 2 more minutes.
Stir the flour in with the pork and continue to stir until the pork is coated in the flour.
Pour in the water then use a wooden spoon to scrape the bottom of the pot to release any stuck on bits.
Stir in the potatoes and 2 tsp salt then bring to a boil.
Reduce the heat to medium-low and simmer, stirring occasionally, until the potatoes and pork are tender, about 15 minutes.
Stir in the heavy cream and cook until heated through.
Take the soup off the heat and allow to cool a bit then season the soup with salt & pepper to taste.
