INGREDIENTS
1 1/2 pounds baby gold potatoes
1/4 cup plus about 2 more cups of olive oil
4 medium garlic cloves, minced
salt

DIRECTIONS
Preheat the oven to 225°F.
Lay the potatoes in a single layer into a dutch oven or baking dish with high sides.
Pour 1/4 cup of the oil into a small bowl and mix in the minced garlic and 1/4 tsp salt then pour evenly over the potatoes.
Now pour more olive oil over the potatoes, just enough so that the potatoes are submerged in oil.
Place the potatoes in the preheated oven, uncovered, and bake for 2 hours and 30 minutes.
Take the potatoes out of the oven then set aside to allow to cool for about 15 minutes.
Use a slotted spoon to transfer the potatoes to a serving dish then sprinkle with salt and serve.
