Combine all the MARINADE ingredients (garlic, olive oil, lemon zest, lemon juice, yogurt, oregano, salt, and pepper) together in a large mixing bowl.
Add the chicken strips to marinade and toss to coat then cover the bowl and refrigerate for at least 2 hours.
MAKE THE TZATZIKI SAUCE:
Stir together all the TZATZIKI SAUCE ingredients (lemon juice, yogurt, cucumber, olive oil, garlic, salt, and pepper) in a bowl until well combined then cover the bowl and refrigerate until ready to use.
BRINGING IT TOGETHER:
Heat the 3 TBSP of cooking oil in a large skillet over medium-high heat.
Transfer the chicken strips to the hot pan, shaking off any excess marinade, and cook the chicken, in batches, until browned and cooked through, about 5 minutes per batch. Transfer the cooked chicken to a plate.
Warm your pitas then fill with the chicken, Tzatziki sauce, red onion and tomatoes.
