INGREDIENTS

  • 2 pounds boneless skinless chicken thighs, cut into 1/4-inch thick strips
  • 3 TBSP olive oil
  • 6 pita or flatbreads
  • 1 small red onion, thinly sliced
  • 8 ounces roma tomatoes, diced
  • THE MARINADE:
  • 2 medium garlic cloves, minced
  • 2 TBSP olive oil
  • 1 tsp lemon zest
  • 3 TBSP fresh lemon juice
  • 3 TBSP plain Greek yogurt
  • 1 TBSP dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • TZATZIKI SAUCE:
  • 1 TBSP fresh lemon juice
  • 1 cup plain Greek yogurt
  • 1/2 cup diced cucumber
  • 1 tsp olive oil
  • 1 medium garlic clove, minced
  • 1/2 tsp salt
  • 1/8 tsp black pepper



DIRECTIONS

  1. MARINATE THE CHICKEN:
  2. Combine all the MARINADE ingredients (garlic, olive oil, lemon zest, lemon juice, yogurt, oregano, salt, and pepper) together in a large mixing bowl.
  3. Add the chicken strips to marinade and toss to coat then cover the bowl and refrigerate for at least 2 hours.
  4. MAKE THE TZATZIKI SAUCE:
  5. Stir together all the TZATZIKI SAUCE ingredients (lemon juice, yogurt, cucumber, olive oil, garlic, salt, and pepper) in a bowl until well combined then cover the bowl and refrigerate until ready to use.
  6. BRINGING IT TOGETHER:
  7. Heat the 3 TBSP of cooking oil in a large skillet over medium-high heat.
  8. Transfer the chicken strips to the hot pan, shaking off any excess marinade, and cook the chicken, in batches, until browned and cooked through, about 5 minutes per batch. Transfer the cooked chicken to a plate.
  9. Warm your pitas then fill with the chicken, Tzatziki sauce, red onion and tomatoes.
