INGREDIENTS
2 TBSP olive oil
16 ounces fresh green beans, trimmed and cut into roughly 2-inch pieces
2/3 cup walnut pieces
2/3 cup crumbled feta cheese
salt & freshly ground black pepper
DRESSING:
4 TBSP olive oil
2 TBSP fresh lemon juice
1 medium garlic clove, minced
1/2 tsp salt
1/4 tsp freshly ground black pepper
CONVERSION CALCULATOR
DIRECTIONS
Heat the oil in a large skillet over medium heat.
Add the cut green beans to the skillet and cook, stirring occasionally, until the beans begin to blister, 4 to 5 minutes.
Add the walnuts to the skillet and continue to cook, stirring often, for about 2 more minutes.
Transfer the beans and walnuts to a bowl along with the feta.
In a separate bowl whisk together the DRESSING ingredients (olive oil, lemon juice, garlic, salt & pepper) until well combined.
Drizzle the dressing over the bean salad then toss to coat.
Season with salt & pepper to taste.
