INGREDIENTS

  • 1 pound ground beef
  • 1 large yellow onion, diced
  • 1 TBSP paprika
  • 1 TBSP garlic powder
  • 1 TBSP ground cumin
  • 1/4 tsp cayenne pepper
  • salt & black pepper
  • 1/3 cup uncooked farro, rinsed thoroughly
  • 1 cup water



DIRECTIONS

  1. Add the ground beef, onion, paprika, garlic, cumin, cayenne, 1 tsp salt, and 1/4 tsp black pepper to a dutch oven or large pot over medium-high heat.
  2. Cook, while breaking up the beef, until the beef is well browned, about 6 minutes.
  3. Stir in the farro and water and bring to a boil.
  4. Place a lid on the pot then reduce the heat to medium-low and simmer, stirring occasionally, for about 30 minutes.
  5. Remove the lid from the pot and continue to simmer, stirring often, until most of the liquid has been absorbed, about 15 more minutes.
  6. Take off the heat then season with additional salt & pepper, if needed.
  7. Serve in your choice of sift or hard taco shells with your favorite taco toppings.
