Make the chorizo sausage by mixing together the ground pork, garlic, paprika, smoked paprika, salt, oregano, black pepper, cumin, cinnamon, and cloves in a large mixing bowl until well combined.
Cook the chorizo in a skillet over medium heat, breaking up the sausage as it cooks, until browned and cooked through, about 10 minutes.
Take the skillet off the heat and stir in the cheese then set aside.
Split and toast your bread rolls.
Spread the refried beans on the bottom halves of the rolls then top with the cheesy chorizo sausage, sliced red onion, and sliced avocado then the other half of the roll.
