Healthy Almond Date Granola

Ingredients
4 cups rolled oats
1 cup raw almonds
1/2 cup unsweetened coconut flakes
3/4 tsp salt
1/2 tsp ground cinnamon
8 ounces Medjool dates, pitted
1/2 cup hot water
1/2 cup peanut oil
1 tsp vanilla extract
Directions
1. Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper.
2. In a large mixing bowl combine the oats, almonds, coconut, salt, and cinnamon until well mixed.
3. Add the dates and hot water to a food processor or blender and blend until smooth. Scrape the pureed dates into the bowl with the oat mixture. Pour in the oil and vanilla, stir until well combined.
4. Pour the granola onto the lined baking sheet and spread out evenly. Bake in the preheated oven for 10 minutes.
5. Take the baking sheet out of the oven and stir the granola then push it together and press it down evenly using a spatula. Return to the oven and bake for about 10 more minutes or until just browned.
6. Take granola out of the oven and allow to completely cool, about 1 hour. The granola will harden as it cools.
