Ingredients
- 4 cloves garlic, chopped
- 1/2 cup carrots, chopped
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 1/4 cup butter
- 1/2 cup flour
- 6 cups chicken broth
- dash of thyme
- 1 bay leaf
- dash of white pepper
- 1 cup ham, chopped
- 1 lb yukon gold potatoes, diced 1/2 inch

Directions
- In a dutch oven over medium heat melt butter and add garlic, carrots, celery and onion. Saute for 2 to 3 minutes.
- Add flour and cook stirring constantly about 5 minutes.
- Add the chicken broth, thyme, bay leaf and pepper. Stir and cook until it begins to boil.
- Add the ham and potatoes. Reduce to low heat and simmer until the liquid thickens and potatoes are tender stirring often, about 45 minutes.
