In a small bowl mix together the garlic, 1 tsp salt, and 1 tsp pepper. Heat the oil in a dutch oven or large saute pan over medium-high heat. Rub the pork all over with the seasoning mix then sear the pork until well browned on all sides, about 3 minutes per side.
Transfer the seared pork to a 6-quart slow cooker. Place the lid on the slow cooker and cook the pork on LOW for 7 to 8 hours or until pork is tender.
Turn off the slow cooker. Shred the pork using two forks and discard the bone.
Combine all the HONEY MUSTARD SAUCE ingredients together in a bowl. Mix half the sauce in with the shredded pork. Taste and season with salt & pepper if necessary.
Serve the pork on the pretzel buns with the remaining honey mustard on the side.
