Japanese Style Sweet & Spicy Glazed Chicken Wings
Chicken wings marinated in sake then baked with a spicy honey glaze.

Ingredients
- 3 lbs chicken wings, cut at the joints and tips removed
- 1 green onion, thinly sliced, for garnish
- Marinade
- 1/2 cup sake
- 1 tsp sesame oil
- 2 TBSP soy sauce
- 1 TBSP fresh grated ginger
- Glaze
- 1/2 cup honey
- 3 TBSP soy sauce
- 3 TBSP mirin
- 1 tsp red pepper flakes

Directions
- Place the wings in a resealable gallon plastic bag. In a small bowl combine the marinade ingredients and pour in the bag over the wings. Remove any air from the bag and seal. Massage the wings in the bag so they all get covered with the marinade. Place the bag in the refrigerator to marinate for 6 hours.
- Preheat the oven to 425°F. Line a baking sheet with aluminum foil and top with a baking rack.
- In a small bowl mix together the glaze ingredients and set aside.
- Place the wings on the baking rack and discard any remaining marinade. Cook the wings in the preheated oven for 15 minutes then brush with the glaze, cook 15 more minutes and brush with more glaze, cook 15 more minutes and brush with the remaining glaze and cook for 10 more minutes (total of about 1 hour in the oven).
- Remove the wings from the oven and allow to cool for 10 minutes. Sprinkle on the sliced green onions and serve.

I like these wings, next time I will add more red pepper flakes though for a little more kick.
