INGREDIENTS
2 medium lemons
2 TBSP olive oil
1 TBSP garlic powder
2 tsp salt
1 tsp freshly ground black pepper
4 pounds bone-in skin-on chicken thighs

DIRECTIONS
Preheat the oven to 425°F.
Slice the lemons into 1/4-inch thick rounds then spread out the lemon slices in a single layer onto a large rimmed baking sheet.
In a large bowl stir together the olive oil, garlic, salt, and pepper until well combined.
Pat the chicken thighs dry with paper towels.
Place the chicken thighs into the bowl then flip them around to evenly coat in the oil and spice mixture.
Spread the chicken thighs, skin-side up, onto the baking sheet on top of the lemon slices.
Bake in the preheated oven until the chicken is cooked through and browned on top, about 45 minutes.
Take the chicken out of the oven and set aside to rest for about 10 minutes before serving.
