INGREDIENTS
2 TBSP unsalted butter, melted
1/4 cup water
1/2 tsp dried rosemary
1/2 tsp dried oregano
1/2 tsp garlic powder
Zest and juice from 1 medium lemon
salt & freshly ground black pepper
4 large bone-in chicken thighs
2 TBSP olive oil

DIRECTIONS
Preheat the oven to 400°F.
Stir together the melted butter, water, rosemary, oregano, garlic, lemon zest, and lemon juice in a measuring cup and set aside.
Pat the chicken thighs dry with paper towels then generously season the chicken thighs all over with salt & pepper.
Heat the oil in a large cast-iron skillet over medium-high heat.
Add the chicken thighs skin-side down into the skillet and sear until well browned, 3 to 4 minutes.
Flip the chicken thighs over so they are skin-side up then drizzle the butter mixture over the chicken.
Place the skillet in the oven and bake until chicken is cooked through, 25 to 30 minutes.
