Marinated Italian Vegetable Salad
This quick easy to make salad is fresh, crunchy and refreshing.

Ingredients
- Dressing:
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 tsp mayonnaise
- 1/4 tsp granulated garlic
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
- 1/8 tsp red pepper flakes
- 1 TBSP red wine vinegar
- 1 TBSP water
- 2 TBSP olive oil
- Vegetables:
- 2 cup cauliflower, cored and cut in bite size pieces
- 2 cup green beans, snipped and cut in fourths
- 1 cup grape tomatoes, sliced in half
- 1 cup black olives, sliced in half
- 1 cup orange pepper, chopped
- 1/4 cup shallot, sliced thinly
- 1/4 cup Italian parsley, roughly chopped

Directions
- Whisk together all the ingredients for the dressing.
- Add the vegetables and toss together.
- Allow to marinate at least 20 minutes and up to overnight.
- Remove from fridge and taste. Add more salt and/or a splash of vinegar if needed. Serve
