INGREDIENTS
1 TBSP plus 1 TBSP olive oil
8 ounces fresh roma tomatoes, roughly chopped
1 small yellow onion, roughly chopped
2 medium garlic cloves, roughly chopped
1 cup uncooked long-grain white rice
1 1/2 cups water
1/2 tsp salt
1 medium serrano pepper

DIRECTIONS
Heat 1 TBSP of the oil in a medium-size saucepan over medium-high heat.
Add the tomatoes, onion, and garlic to the pan and cook, stirring often, for about 3 minutes.
Put the contents of the pan into a blender or food processer then blend well and set aside.
Heat the remaining 1 TBSP of oil in the now empty saucepan over medium-high heat.
Add the rice to the pan and cook, while stirring, for about 1 minute.
Stir the tomato mixture, water, and salt in with the rice.
Use a knife to cut a couple slits in the serrano pepper then place the serrano pepper in the pan.
Cook, stirring occasionally, until the liquid in the pan just begins to boil.
Place a lid on the pan then reduce the heat to low.
Simmer the rice, without removing the lid, for 15 minutes.
Turn off the heat and let the pan sit on the stove, without removing the lid, for 20 more minutes.
Now remove the lid from the pan and fluff the rice with a fork then season with salt & pepper to taste.
