INGREDIENTS
2 TBSP olive oil
1 medium yellow onion, diced
8 ounces tomato, small chopped
1 small jalapeno. diced
2 garlic cloves, minced
1/2 tsp ground cumin
salt and freshly ground black pepper
1 cup uncooked long-grain rice
1 1/2 cups water
1/4 cup freshly chopped cilantro
lime wedges for serving
CONVERSION CALCULATOR
DIRECTIONS
Heat the olive oil in a medium-size saucepan over medium-high heat.
Add the onion, tomato, jalapeno, garlic, cumin, 1/2 tsp salt, and 1/4 tsp black pepper then cook until the mixture begins boiling rapidly.
Reduce the heat to medium-low and simmer, occasionally stirring and breaking up the tomatoes, for about 5 minutes.
Stir in the rice and water then increase the heat to medium-high and bring to a boil.
Place a lid on the pan then reduce the heat to low and simmer, without removing the lid, for 10 minutes.
Turn off the heat, still keeping the lid on, and let sit for about 20 more minutes.
Take the lid off the pan then gently stir in the fresh cilantro.
Season rice with salt & pepper to taste and serve with the lime wedges on the side.
